Preparation

Preparation for the next 30 days has taken two forms. 


The first has been some extensive shopping, re-stocking the cupboards with wonderful wholesome food, coupled with cleaning of glass jars and finally some cooking in preparation for tomorrow. 


This afternoon in the kitchen it has been a hive of activity, and I have loved it. 


Today's cooking has included: 





Curried Chickpeas


I loved this super easy recipe. I am a great fan of curried anything especially lentils, so this was dream recipe. I now have a lovely jar of curried wonderfulness in my fridge for the next few days. 





Granola


Again super quick and it smells divine. To be truthful it is not 100% vegan as I used some wonderful raw honey I had in the fridge. I know this is strictly not in the challenge but I did not want to buy a new sweetener before I had finished the last one. Next I am going to try some agave I saw in the supermarket the other day, which will be in the true vegan spirit. 



Finally I made some Tahini sauce. Which I intend to spread all over everything in the coming days, as it is just lovely. It is now melding together in the fridge just waiting for some steamed green beans, or a lovely salad wrap. 


The second part of preparation for the 30 vegan challenge has been a little removed from the healthy living quest I am about to embark on. Living in a country where beef is king I had to indulge in a little (or maybe a lot) of steak before having a well earned break from heavy meals. I have also said a tearful farewell to cheese by indulging in a meltingly delicious toasted sandwich. 


All that said I am very much looking forward to four weeks of no meat or cheese, lots of gorgeous veggies and tons of yoga.
